Ingredients
  

Soup Base
  • 2 lbs potatoes peeled and diced
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 onion diced
  • 4 cloves garlic minced
  • 4 cups vegetable broth
  • 0.75 cup heavy cream
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme or parsley

Equipment

Method
 

  1. Sauté onion in butter and oil until soft.
  2. Add garlic and cook until fragrant.
  3. Add potatoes, broth, salt, and pepper.
  4. Simmer until potatoes are tender.
  5. Blend soup partially for desired texture.
  6. Stir in cream and herbs, then serve.

Adjust thickness with additional broth if needed.
