Ingredients
  

Potato Layers
  • 3 sweet potatoes peeled and thinly sliced
  • 1 cup shredded gruyere or cheddar
  • 0.25 cup parmesan cheese grated
Cream Sauce
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme
  • 1 pinch nutmeg optional

Method
 

  1. Preheat oven and grease a baking dish.
  2. Make garlic cream sauce by cooking butter, garlic, flour, then whisking in milk and cream.
  3. Season sauce and simmer until slightly thickened.
  4. Layer sliced sweet potatoes with sauce and cheese.
  5. Repeat layers and finish with cheese on top.
  6. Bake covered until tender, then uncovered until golden.
  7. Rest before serving and garnish with herbs.
