Ingredients
  

Caesar Dressing
  • 1 cup mayonnaise full-fat for best texture
  • 0.5 cup Parmesan cheese finely grated
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic finely minced
  • 1 tsp anchovy paste or 1 anchovy fillet, minced
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp olive oil optional for extra silkiness

Method
 

  1. In a mixing bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, and Worcestershire sauce until smooth.
  2. Add minced garlic and anchovy paste, whisking thoroughly to incorporate.
  3. Season with salt and freshly ground black pepper.
  4. If desired, whisk in olive oil for an extra silky finish.
  5. Taste and adjust seasoning as needed. Chill for 20 minutes before serving for best flavor.

Notes

For an extra punch, add more anchovy paste or garlic. Store up to 5 days in the refrigerator.
