Ingredients
  

  • 12 oz fettuccine pasta
  • 1 lb Italian sausage casings removed
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes optional
  • salt and black pepper to taste
  • fresh parsley chopped, for garnish

Equipment

  • Large pot for pasta
  • Skillet or sauté pan
  • Spatula
  • Knife and cutting board

Method
 

  1. Cook pasta according to package instructions. Drain and reserve ½ cup pasta water.
  2. Heat olive oil in skillet over medium heat. Brown Italian sausage, breaking into pieces. Remove and set aside.
  3. Sauté onions and garlic in the same skillet until soft and fragrant.
  4. Add heavy cream, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer 3–4 minutes.
  5. Return sausage to skillet and toss with fettuccine, adding reserved pasta water as needed.
  6. Stir in Parmesan cheese until melted. Adjust seasoning and serve with fresh parsley.

Notes

For extra flavor, add mushrooms or spinach. Serve immediately for best creaminess.
