Ingredients
  

Base
  • 1.5 cups Arborio rice
  • 4 cups broth warm
  • 2 tbsp olive oil
  • 2 tbsp butter
Mushroom Mixture
  • 12 oz mushrooms sliced
  • 1 onion diced
  • 2 cloves garlic minced
Finish
  • 0.75 cup Parmesan cheese grated
  • 1 tbsp butter

Equipment

  • Wide pan or skillet
  • Saucepan
  • Wooden spoon

Method
 

  1. Warm broth and keep over low heat.
  2. Sauté onion and mushrooms until golden.
  3. Toast rice briefly in pan.
  4. Add broth gradually, stirring until absorbed.
  5. Finish with Parmesan and butter, then serve.

Notes

Serve immediately for best texture. Add broth when reheating leftovers.
