Toast Base
  • 2 slices bread thick-cut, sourdough or artisan
  • 1-2 tsp olive oil or butter
Ricotta Spread
  • 0.5 cup ricotta cheese softened
  • 1 tsp lemon zest optional
  • salt & pepper to taste
Eggs
  • 2 eggs sunny-side up, poached, or soft scrambled
Toppings & Garnish
  • fresh herbs chives, parsley, or microgreens
  • cherry tomatoes sliced, optional
  • red chili flakes or black pepper optional

Method
 

  1. Toast bread slices in skillet or oven with olive oil or butter until golden brown.
  2. Spread softened ricotta evenly over warm toast. Add lemon zest if desired.
  3. Cook eggs to preferred style: sunny-side up, poached, or soft scrambled.
  4. Place cooked eggs on top of ricotta-covered toast.
  5. Add optional toppings: cherry tomatoes, herbs, red chili flakes, or extra seasoning.
  6. Serve immediately for best texture and flavor.
