Method
- Cook pasta in a large pot of salted water until al dente. Drain, reserving ½ cup pasta water.
- Heat olive oil in a skillet over medium heat. Sauté garlic 1–2 minutes until fragrant.
- Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer 5–7 minutes.
- Reduce heat to low. Stir in heavy cream and Parmesan until sauce is smooth.
- Add cooked pasta to skillet, tossing to coat. Add reserved pasta water as needed to adjust consistency.
- Taste and adjust seasoning. Serve with fresh basil and additional Parmesan.
Notes
For extra flavor, sauté additional vegetables or protein. Sauce can be prepared ahead and tossed with freshly cooked pasta.
