Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1.5 lbs potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 cup plant milk unsweetened

Equipment

  • Large pot
  • Potato masher or immersion blender

Method
 

  1. Sauté onion, carrots, and celery in olive oil until soft.
  2. Add garlic and potatoes and stir briefly.
  3. Add broth and simmer until potatoes are tender.
  4. Partially mash soup for creamy texture.
  5. Stir in plant milk, seasoning, and simmer briefly.

Adjust thickness with additional broth if needed.
