- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, eggs, olive oil, salt, and optional herbs until a cohesive dough forms.
- Place dough between parchment sheets and roll to 1/8-inch thickness.
- Score into squares or rectangles with a pizza cutter.
- Bake 12–15 minutes until golden and firm.
- Cool completely on baking sheet, then separate crackers.
- Store in an airtight container for up to 5 days.
