- Cook bacon until crisp, drain, and crumble.
- Remove seeds from jalapeños and chop finely.
- In a bowl, mix cream cheese, shredded cheddar, crumbled bacon, jalapeños, garlic powder, salt, and pepper until smooth.
- Lay egg roll wrappers on a clean surface. Spoon 2-3 tablespoons of filling onto the bottom third.
- Fold bottom corner over filling, fold in sides, and roll tightly. Seal edge with water.
- Heat oil to 350°F (175°C) in a skillet or deep fryer. Fry 3–4 egg rolls at a time until golden brown, turning occasionally.
- Drain on paper towels. Serve hot with dipping sauce of choice.
Notes
For extra flavor, add spicy mayo or ranch dipping sauce. Egg rolls can be baked as a healthier alternative at 400°F for 18–22 minutes, brushing lightly with oil halfway through.
