Ingredients
  

Filling
  • 8-10 slices bacon cooked and crumbled
  • 2-3 fresh jalapeños seeds removed if desired, finely chopped
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ¼ tsp garlic powder optional
  • salt and black pepper to taste
Egg Rolls & Frying
  • 12 egg roll wrappers
  • 2-3 inches neutral oil for frying, like canola or peanut oil

Method
 

  1. Cook bacon until crisp, drain, and crumble.
  2. Remove seeds from jalapeños and chop finely.
  3. In a bowl, mix cream cheese, shredded cheddar, crumbled bacon, jalapeños, garlic powder, salt, and pepper until smooth.
  4. Lay egg roll wrappers on a clean surface. Spoon 2-3 tablespoons of filling onto the bottom third.
  5. Fold bottom corner over filling, fold in sides, and roll tightly. Seal edge with water.
  6. Heat oil to 350°F (175°C) in a skillet or deep fryer. Fry 3–4 egg rolls at a time until golden brown, turning occasionally.
  7. Drain on paper towels. Serve hot with dipping sauce of choice.

Notes

For extra flavor, add spicy mayo or ranch dipping sauce. Egg rolls can be baked as a healthier alternative at 400°F for 18–22 minutes, brushing lightly with oil halfway through.
