Ingredients
  

Zucchini
  • 3 zucchini medium
  • 2 tbsp olive oil
Coating
  • 0.5 cup grated parmesan cheese
  • 0.5 cup breadcrumbs panko preferred
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchini into sticks or rounds and pat dry.
  3. Mix parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
  4. Toss zucchini with olive oil.
  5. Coat zucchini in parmesan mixture.
  6. Arrange on baking sheet in single layer.
  7. Bake 18–22 minutes, flipping halfway.
  8. Broil briefly for extra crispiness and serve.

Notes

Serve immediately for best crisp texture. Great with marinara, ranch, or garlic dip.
