Method
- Heat a nonstick skillet over medium heat.
- Add chili oil or olive oil.
- Sprinkle crumbled feta into the skillet in a circular shape.
- Let the feta melt and begin to crisp.
- Crack eggs directly on top of the feta.
- Lower heat and cook until whites are set and edges are golden.
- Drizzle with more chili oil and garnish with herbs.
- Serve immediately with toast or pita.
Notes
For extra crispiness, slightly increase heat once feta has melted. Avoid over-salting—feta is naturally salty.
