Ingredients
  

Eggs
  • 0.5 cup crumbled feta
  • 2 eggs large
  • 1 tbsp chili oil or olive oil
  • 0.25 tsp red pepper flakes optional
  • 1 tbsp fresh herbs optional garnish

Equipment

  • Nonstick or cast iron skillet
  • Spatula
  • Measuring spoon

Method
 

  1. Heat a nonstick skillet over medium heat.
  2. Add chili oil or olive oil.
  3. Sprinkle crumbled feta into the skillet in a circular shape.
  4. Let the feta melt and begin to crisp.
  5. Crack eggs directly on top of the feta.
  6. Lower heat and cook until whites are set and edges are golden.
  7. Drizzle with more chili oil and garnish with herbs.
  8. Serve immediately with toast or pita.

Notes

For extra crispiness, slightly increase heat once feta has melted. Avoid over-salting—feta is naturally salty.
