Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
Butter Mixture
  • 4 tbsp unsalted butter melted
  • 3 tbsp olive oil
  • 4 cloves garlic minced
Seasonings
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika optional
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
  2. Wash and halve potatoes; pat dry for maximum crispiness.
  3. Melt butter and combine with olive oil and minced garlic.
  4. Toss potatoes in the garlic butter mixture until fully coated.
  5. Season with salt, black pepper, and paprika.
  6. Arrange potatoes cut-side down on the baking sheet.
  7. Roast 30–40 minutes until deeply golden and crispy.
  8. Sprinkle with fresh parsley and serve hot.

Notes

For extra crispiness, let the potatoes rest 5 minutes before serving. Add grated Parmesan for a richer flavor.
