- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- Trim and halve Brussels sprouts. Pat dry to remove extra moisture.
- Place Brussels sprouts in a large mixing bowl. Toss with olive oil, garlic, salt, and pepper.
- Add half of the grated parmesan and panko (if using). Toss to coat evenly.
- Arrange Brussels sprouts cut-side down in a single layer on the baking sheet.
- Roast for 20–25 minutes, until golden brown and crispy on the edges.
- Remove from oven and sprinkle with remaining parmesan while still hot.
- Garnish with parsley and serve immediately.
Notes
For extra crispiness, make sure the Brussels sprouts are dry before roasting. To reheat, use an air fryer for best texture.
