  • 1.5 lbs Brussels sprouts trimmed and halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 cup parmesan cheese grated, divided
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
Optional
  • 2 tbsp panko breadcrumbs for extra crunch
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Trim and halve Brussels sprouts. Pat dry to remove extra moisture.
  3. Place Brussels sprouts in a large mixing bowl. Toss with olive oil, garlic, salt, and pepper.
  4. Add half of the grated parmesan and panko (if using). Toss to coat evenly.
  5. Arrange Brussels sprouts cut-side down in a single layer on the baking sheet.
  6. Roast for 20–25 minutes, until golden brown and crispy on the edges.
  7. Remove from oven and sprinkle with remaining parmesan while still hot.
  8. Garnish with parsley and serve immediately.

Notes

For extra crispiness, make sure the Brussels sprouts are dry before roasting. To reheat, use an air fryer for best texture.
