Ingredients
  

Soup Base
  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 8-10 lasagna noodles, broken
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 0.5 cup grated Parmesan

Equipment

  • Slow cooker
  • Skillet
  • Mixing bowl
  • Wooden spoon

Method
 

  1. Brown the ground beef or sausage and drain excess fat.
  2. Add onion and garlic, sauté until softened.
  3. Transfer meat mixture to slow cooker.
  4. Add tomatoes, broth, tomato paste, and all seasonings.
  5. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  6. Add broken lasagna noodles 30 minutes before serving.
  7. Mix ricotta, mozzarella, and Parmesan for the cheese topping.
  8. Serve hot with cheese mixture on top.

Notes

For extra richness, add a splash of cream before serving.
