Crockpot Swamp Potatoes

Ingredients
  

Main
  • 3 lbs potatoes thinly sliced
  • 1 large onion thinly sliced
  • 4 tbsp butter
  • 1 tbsp minced garlic
  • 2 cups shredded cheddar cheese
  • salt & black pepper to taste
  • 1 tsp paprika
Topping
  • 1 cup cooked bacon bits
  • chopped green onions for garnish

Equipment

  • Crockpot / Slow Cooker
  • Knife
  • Cutting board

Method
 

  1. Grease the bottom of the slow cooker with butter.
  2. Place a layer of sliced potatoes on the bottom.
  3. Add a layer of sliced onions on top.
  4. Sprinkle garlic, salt, pepper, and paprika.
  5. Add a handful of shredded cheese and some pieces of butter.
  6. Repeat layering until all ingredients are used.
  7. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until potatoes are soft.
  8. Top with cooked bacon and chopped green onions before serving.

Notes

For extra creaminess, add a splash of heavy cream or a dollop of sour cream before serving.
