- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk flour, graham cracker crumbs, salt, and baking powder.
- Fold dry ingredients into wet ingredients until smooth dough forms.
- Portion dough into balls, roll in graham cracker crumbs, place on baking sheet, and flatten slightly.
- Bake 10–12 minutes until edges are lightly golden. Cool on baking sheet 5 minutes, then transfer to wire rack.
- Prepare frosting: beat cream cheese and softened butter until smooth, then add powdered sugar and vanilla extract until light and fluffy.
- Spread or pipe frosting onto cooled cookies.
- Mix topping graham cracker crumbs with melted butter and sprinkle over frosting.
- Chill for 30 minutes before serving. Store in airtight container in refrigerator up to 5 days.
Notes
Dough can be frozen before baking. Chilling ensures frosting sets properly.
