  • 2 cucumbers diced
  • 2 avocados cubed
  • 0.25 red onion thinly sliced
  • 2 tbsp fresh cilantro chopped
  • 1 lime juiced
  • 1 tbsp olive oil
  • To taste salt and black pepper

Method
 

  1. Dice cucumbers and avocado, thinly slice red onion, and chop cilantro.
  2. Combine cucumbers, avocado, red onion, and cilantro in a large bowl.
  3. Drizzle with lime juice and olive oil.
  4. Season with salt and black pepper. Toss gently to coat.
  5. Serve immediately or store with avocado added just before serving.

Notes

Add avocado just before serving to prevent browning. Optional extras include cherry tomatoes or feta cheese.
