- In a saucepan, combine cherries, sugar, and cherry juice; heat 5 minutes and cool slightly.
- Stir in Amaretto into cooled cherry mixture.
- Whip heavy cream with sugar until soft peaks form.
- Fold mascarpone cheese and vanilla into whipped cream until smooth.
- Quickly dip ladyfingers into cherry-Amaretto mixture.
- Arrange a layer of soaked ladyfingers in dish or glasses.
- Spread half the mascarpone cream over ladyfingers.
- Spoon half the cherry mixture over cream layer.
- Repeat layers with remaining ladyfingers, mascarpone cream, and cherries.
- Cover and refrigerate at least 4 hours or overnight.
- Garnish with cocoa, chocolate shavings, or extra cherries before serving.
Notes
Refrigerate overnight for best flavor melding. Serve chilled with espresso or dessert wine.
