Decadent Cherry Amaretto Tiramisu

Ingredients
  

Cherry-Amaretto Soak
  • 1.5 cups cherries, pitted fresh, frozen, or canned
  • 0.25 cup Amaretto liqueur
  • 2 tbsp sugar
  • 2 tbsp cherry juice or water
Mascarpone Cream
  • 1 cup mascarpone cheese softened
  • 1 cup heavy cream
  • 0.33 cup sugar
  • 1 tsp vanilla extract
Assembly
  • 24-30 ladyfingers
  • Optional cocoa powder or chocolate shavings for garnish

Method
 

  1. In a saucepan, combine cherries, sugar, and cherry juice; heat 5 minutes and cool slightly.
  2. Stir in Amaretto into cooled cherry mixture.
  3. Whip heavy cream with sugar until soft peaks form.
  4. Fold mascarpone cheese and vanilla into whipped cream until smooth.
  5. Quickly dip ladyfingers into cherry-Amaretto mixture.
  6. Arrange a layer of soaked ladyfingers in dish or glasses.
  7. Spread half the mascarpone cream over ladyfingers.
  8. Spoon half the cherry mixture over cream layer.
  9. Repeat layers with remaining ladyfingers, mascarpone cream, and cherries.
  10. Cover and refrigerate at least 4 hours or overnight.
  11. Garnish with cocoa, chocolate shavings, or extra cherries before serving.

Notes

Refrigerate overnight for best flavor melding. Serve chilled with espresso or dessert wine.
