Lobster
  • 2 whole lobster
Thermidor Sauce
  • 2 tbsp unsalted butter
  • 1 shallot minced
  • 1 clove garlic minced
  • 1 tbsp all-purpose flour
  • 0.5 cup fish stock
  • 0.5 cup heavy cream
  • 1 tsp Dijon mustard
  • 2 tbsp brandy
Topping
  • 0.5 cup Gruyère cheese grated

Method
 

  1. Boil lobsters until cooked, then remove meat.
  2. Prepare creamy brandy sauce.
  3. Fold lobster into sauce gently.
  4. Fill shells and top with cheese.
