Ingredients
  

Banana Jam
  • 4 ripe bananas mashed
  • 1 cup brown sugar packed
  • 0.25 cup dark rum
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt

Method
 

  1. Mash bananas until mostly smooth.
  2. Combine bananas, sugar, lemon juice, cinnamon, and salt in saucepan.
  3. Cook over medium heat until thickened.
  4. Add rum and simmer until glossy.
  5. Stir in vanilla and cool.
  6. Transfer to jars and refrigerate.

Notes

Alcohol mostly cooks off, leaving rich flavor.
