- Mash bananas until mostly smooth.
- Combine bananas, sugar, lemon juice, cinnamon, and salt in saucepan.
- Cook over medium heat until thickened.
- Add rum and simmer until glossy.
- Stir in vanilla and cool.
- Transfer to jars and refrigerate.
Notes
Alcohol mostly cooks off, leaving rich flavor.
