- Wash and dice potatoes into ½-inch cubes. Pat dry with paper towels.
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes in a single layer. Cook 15–20 minutes, stirring occasionally until golden and crispy.
- Season with salt, pepper, garlic powder, paprika, and herbs if using. Stir to coat evenly.
- Check that potatoes are tender inside and crispy on the outside.
- Garnish with parsley or cheese if desired and serve hot.
Notes
Dice potatoes ahead of time for quicker cooking. Customize with cheese or herbs to your preference.
