Method
- In a bowl, whisk together bourbon, soy sauce, brown sugar, garlic, ginger, and rice vinegar.
- Place chicken thighs in the slow cooker.
- Pour the bourbon sauce over the chicken.
- Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until chicken is tender.
- Remove chicken and set aside.
- Mix cornstarch and water to make a slurry.
- Stir slurry into the sauce in the slow cooker and cook on HIGH for 5-10 minutes until thickened.
- Return chicken to the sauce and toss to coat.
- Serve garnished with green onions and sesame seeds.
Notes
For a non-alcoholic version, substitute bourbon with apple juice or chicken broth with 1 tsp vanilla extract. Adjust sweetness to taste.
