Easy Bourbon Chicken

Ingredients
  

Main
  • 2 lbs boneless, skinless chicken thighs
  • 0.5 cup bourbon
  • 0.5 cup soy sauce
  • 0.5 cup brown sugar packed
  • 3 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch for slurry
  • 1 tbsp water for slurry
  • 2 green onions sliced for garnish
  • sesame seeds optional garnish
  • 1 tbsp rice vinegar optional, for tang

Equipment

  • Crockpot / Slow Cooker
  • Mixing bowl
  • Small bowl for slurry

Method
 

  1. In a bowl, whisk together bourbon, soy sauce, brown sugar, garlic, ginger, and rice vinegar.
  2. Place chicken thighs in the slow cooker.
  3. Pour the bourbon sauce over the chicken.
  4. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until chicken is tender.
  5. Remove chicken and set aside.
  6. Mix cornstarch and water to make a slurry.
  7. Stir slurry into the sauce in the slow cooker and cook on HIGH for 5-10 minutes until thickened.
  8. Return chicken to the sauce and toss to coat.
  9. Serve garnished with green onions and sesame seeds.

Notes

For a non-alcoholic version, substitute bourbon with apple juice or chicken broth with 1 tsp vanilla extract. Adjust sweetness to taste.
