  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 3 cups rolled oats old-fashioned
  • cups raisins or optional chopped nuts

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper.
  2. In a large bowl, mix melted butter with brown sugar and granulated sugar until smooth.
  3. Whisk in eggs and vanilla extract until fully combined.
  4. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually stir dry ingredients into wet mixture until just combined.
  6. Fold in oats and raisins evenly.
  7. Spread batter evenly in prepared pan and bake for 25–30 minutes until golden and set.
  8. Cool completely in pan before slicing into bars.

Store in an airtight container at room temperature up to 5 days or freeze for longer storage.
