Ingredients
  

Salad
  • 2 boneless skinless chicken breasts cooked and sliced
  • 6 cups romaine lettuce chopped
  • 4 slices bacon cooked and crumbled
  • 2 hard-boiled eggs quartered
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup blue cheese crumbled
  • salt and pepper to taste
Dressing
  • 0.5 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey optional
  • 1 clove garlic minced
  • salt and pepper to taste

Method
 

  1. Season and cook chicken breasts, then slice.
  2. Cook bacon until crispy, crumble into pieces.
  3. Prepare eggs, avocado, and cherry tomatoes.
  4. Whisk together olive oil, red wine vinegar, Dijon, honey, garlic, salt, and pepper for dressing.
  5. Arrange lettuce in a large bowl, then top with rows of chicken, bacon, eggs, avocado, tomatoes, and cheese.
  6. Drizzle with dressing before serving or serve dressing on the side.

Notes

For a lighter salad, swap half the oil in the dressing with Greek yogurt. Salad is best assembled fresh, but dressing can be stored in the fridge for up to 5 days.
