- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Slice jalapeños in half lengthwise, removing seeds and membranes.
- Mix cream cheese, cheddar, garlic, onion powder, paprika, salt, and pepper in a bowl until creamy.
- Spoon mixture into jalapeño halves, pressing down gently.
- Mix breadcrumbs, melted butter, and Parmesan. Sprinkle over filled jalapeños.
- Bake 18–20 minutes until cheese is bubbly and jalapeños are tender.
- Top with bacon and fresh chives before serving.
Notes
Wear gloves when handling jalapeños to avoid irritation. For extra spice, leave some seeds in.
