Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 lb ground beef or sausage
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes 28 oz
  • 4 cups chicken broth
  • 2 tsp Italian seasoning
  • 8 lasagna noodles broken into pieces
  • 1 cup heavy cream
  • salt & pepper to taste
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup mozzarella shredded
  • 0.5 cup parmesan grated
  • 2 tbsp fresh basil chopped

Equipment

  • Large pot
  • Wooden spoon
  • Cheese bowl
  • Ladle

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Brown ground beef or sausage until fully cooked.
  3. Add diced onion and sauté until softened.
  4. Add garlic and cook for 1 minute.
  5. Stir in tomato paste and cook briefly to deepen flavor.
  6. Add crushed tomatoes and broth.
  7. Stir in Italian seasoning and bring to a simmer.
  8. Add broken lasagna noodles and cook until tender.
  9. Stir in heavy cream and season with salt and pepper.
  10. Combine ricotta, mozzarella, and parmesan in a bowl.
  11. Serve soup topped with cheese mixture and basil.

Notes

For even more flavor, add a splash of red wine while sautéing the meat.
