Cookie Base
  • 0.75 cup natural peanut butter unsweetened
  • 0.33 cup coconut oil
  • 0.25 cup unsweetened cocoa powder
  • 0.33 cup powdered erythritol or monk fruit
  • 1.5 cups unsweetened shredded coconut
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Melt peanut butter and coconut oil over low heat until smooth.
  2. Remove from heat and whisk in cocoa powder, sweetener, vanilla, and salt.
  3. Stir in shredded coconut until evenly coated.
  4. Scoop mixture onto parchment-lined tray and flatten slightly.
  5. Refrigerate 20–30 minutes until firm.

Notes

Use powdered sweetener for best texture.
