Ingredients
  

  • 1 cup Medjool dates pitted
  • 1 cup rolled oats
  • 0.5 cup almond flour
  • 1 tbsp lemon zest
  • 2 tsp lemon juice
  • 0.25 cup shredded coconut
  • 1 tbsp coconut oil melted

Equipment

  • Food processor
  • Mixing bowl

Method
 

  1. Add all ingredients to a food processor and blend until sticky dough forms.
  2. Roll mixture into small balls.
  3. Chill for 15 minutes before serving.

Notes

Roll in extra shredded coconut for garnish if desired.
