Ingredients
  

Crust
  • 2 cups digestive biscuits crushed
  • 0.5 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 0.75 cup pistachio paste
  • 1 tsp vanilla extract
  • 1 cup heavy cream whipped

Method
 

  1. Mix crushed biscuits with melted butter and press into pan.
  2. Chill crust until firm.
  3. Beat cream cheese, sugar, vanilla, and pistachio paste until smooth.
  4. Fold in whipped cream gently.
  5. Spread filling over crust and chill until set.
  6. Slice into bars and garnish with pistachios before serving.

Notes

For firmer bars, chill overnight. Can be frozen and thawed slightly before serving.
