- Place Chex cereal in a large mixing bowl.
- Melt white chocolate chips and butter in the microwave in 30-second intervals, stirring between each.
- Add vanilla extract and optional pistachio extract to melted mixture.
- Pour melted mixture over the cereal and gently fold until evenly coated.
- Combine pistachio pudding mix and powdered sugar in a large zip-top bag.
- Transfer coated cereal into the bag, seal, and shake until fully covered.
- Spread coated cereal onto a parchment-lined tray to cool and set.
- Add chopped pistachios if desired.
Notes
For extra color, add green sprinkles. Store in an airtight container to maintain crunch.
