Ingredients
  

Pumpkins
  • 4 small pie pumpkins 1–1.5 lbs each
  • 2 tbsp olive oil
  • salt and pepper to taste
Filling
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup pepperoni slices optional
  • 1 cup sautéed mushrooms, onions, or bell peppers
  • 1 tsp Italian seasoning
  • fresh basil for garnish

Equipment

  • Baking sheet
  • Sharp knife
  • Mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C). Cut tops off pumpkins and scoop out seeds.
  2. Brush insides with olive oil, season with salt and pepper, and roast 20–25 minutes until slightly tender.
  3. Mix pizza sauce, mozzarella, Parmesan, Italian seasoning, and toppings in a bowl.
  4. Stuff pumpkins with mixture, layering sauce, cheese, and toppings.
  5. Bake stuffed pumpkins for 15–20 minutes until cheese is bubbly and golden.
  6. Serve hot, garnished with fresh basil.

Notes

Use pie pumpkins, not carving pumpkins. Customize with your favorite pizza toppings.
