- Preheat oven to 375°F (190°C). Cut tops off pumpkins and scoop out seeds.
- Brush insides with olive oil, season with salt and pepper, and roast 20–25 minutes until slightly tender.
- Mix pizza sauce, mozzarella, Parmesan, Italian seasoning, and toppings in a bowl.
- Stuff pumpkins with mixture, layering sauce, cheese, and toppings.
- Bake stuffed pumpkins for 15–20 minutes until cheese is bubbly and golden.
- Serve hot, garnished with fresh basil.
Notes
Use pie pumpkins, not carving pumpkins. Customize with your favorite pizza toppings.
