Method
- Chop vegetables and mince garlic. Cut chicken into bite-sized pieces if needed.
 - Add chicken, vegetables, garlic, chicken broth, salt, pepper, thyme, and bay leaf to the slow cooker.
 - Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken and vegetables are tender.
 - Remove bay leaf, adjust seasoning, garnish with parsley, and serve hot.
 
Notes
Optional: add cream or milk at the end for a richer stew. Uniformly cut vegetables for even cooking.
