Ingredients
  

Main
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 3 carrots peeled and sliced
  • 3 celery stalks sliced
  • 2 medium potatoes peeled and cubed
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • fresh parsley optional garnish

Method
 

  1. Chop vegetables and mince garlic. Cut chicken into bite-sized pieces if needed.
  2. Add chicken, vegetables, garlic, chicken broth, salt, pepper, thyme, and bay leaf to the slow cooker.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken and vegetables are tender.
  4. Remove bay leaf, adjust seasoning, garnish with parsley, and serve hot.

Notes

Optional: add cream or milk at the end for a richer stew. Uniformly cut vegetables for even cooking.
