Ingredients
  

Sweet Potato Base
  • 3 cups sweet potatoes cooked and mashed
  • 0.5 cup unsalted butter melted
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp salt
Topping
  • 2 cups mini marshmallows

Equipment

  • Large mixing bowl
  • Hand mixer or potato masher
  • Baking dish

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Mix mashed sweet potatoes, butter, and brown sugar until smooth.
  3. Add eggs, milk, vanilla, cinnamon, and salt; mix well.
  4. Spread mixture evenly in baking dish.
  5. Bake uncovered for 25 minutes.
  6. Top with marshmallows and bake until golden.

Notes

Add marshmallows just before final bake for best texture.
