Method
- Preheat oven to 425°F (220°C) or prepare your air fryer according to manufacturer instructions.
- Cut potatoes into even sticks and soak in cold water for at least 30 minutes to remove excess starch.
- Drain and pat potatoes dry with a clean towel.
- Toss the potato sticks in olive oil, salt, black pepper, and optional garlic powder.
- Arrange fries in a single layer on a baking sheet or in an air fryer basket.
- Bake for 20–25 minutes, flipping halfway through, or air fry for 15–20 minutes until golden and crispy.
- Transfer fries to a large bowl while hot. Drizzle with truffle oil and toss to coat evenly.
- Sprinkle freshly grated parmesan cheese over the fries and gently toss.
- Garnish with chopped parsley if desired and serve immediately for a warm, indulgent snack.
Notes
For extra crispiness, double-bake or double-fry the fries. Serve with garlic aioli, truffle mayo, or spicy ketchup for dipping. Leftovers can be reheated in the oven or air fryer.
