Ingredients
  

Chocolate Cake
  • 0.75 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 4 eggs large
  • 0.75 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
Filling
  • 1.5 cups cherries pitted
  • 0.33 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 cup heavy whipping cream
  • 0.25 cup powdered sugar

Equipment

Method
 

  1. Preheat oven and prepare jelly roll pan with parchment paper.
  2. Whisk dry ingredients together in a bowl.
  3. Beat eggs and sugar until thick and pale.
  4. Fold in vanilla, milk, and dry ingredients gently.
  5. Bake until set and springy.
  6. Roll cake while warm and cool completely.
  7. Cook cherries with sugar and cornstarch until thick.
  8. Whip cream with powdered sugar.
  9. Fill, roll, chill, and decorate before serving.

Notes

Chill before slicing for best results. Optional chocolate shavings enhance presentation.
