- Preheat oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35–40 minutes until soft.
- Allow garlic to cool slightly, then squeeze cloves into a small bowl and mash into a paste.
- Roll out pizza dough on a lightly floured surface and transfer to a parchment-lined baking sheet or pizza stone.
- Spread mashed roasted garlic evenly over the dough, leaving a small border for the crust.
- Drizzle remaining olive oil over the garlic layer.
- Sprinkle mozzarella, Parmesan, and provolone cheeses evenly over the pizza.
- Add fresh thyme, rosemary, salt, and pepper to taste.
- Bake for 15–20 minutes until cheese is melted and crust is golden.
- Remove pizza from oven and let cool 2–3 minutes.
- Garnish with fresh basil leaves and optional toppings before slicing and serving.
Notes
Optional: drizzle with balsamic glaze or chili flakes for extra flavor. Can use store-bought dough for faster preparation.
