- Chop chocolate and place in a medium heatproof bowl.
- Heat cream and butter until just simmering; pour over chocolate and let sit 2 minutes.
- Stir slowly until ganache is smooth and glossy.
- Add orange zest, vanilla, salt, and orange extract if using.
- Chill covered for 1–2 hours until firm.
- Scoop and roll into balls, then coat in cocoa powder.
- Refrigerate truffles for 15 minutes before serving or gifting.
