Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup pistachios chopped, plus extra for topping
Wet Ingredients
  • 0.75 cup sugar
  • 0.5 cup unsalted butter melted and cooled
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients and chopped pistachios in a large bowl.
  3. Whisk together sugar, melted butter, eggs, milk, and vanilla in a separate bowl.
  4. Fold wet ingredients into dry ingredients until just combined.
  5. Fill muffin cups ¾ full and sprinkle extra pistachios on top.
  6. Bake 20–25 minutes until a toothpick comes out clean. Cool on wire rack.

Notes

For extra flavor, drizzle with glaze or sprinkle with coarse sugar before baking.
