Method
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- Mix dry ingredients and chopped pistachios in a large bowl.
- Whisk together sugar, melted butter, eggs, milk, and vanilla in a separate bowl.
- Fold wet ingredients into dry ingredients until just combined.
- Fill muffin cups ¾ full and sprinkle extra pistachios on top.
- Bake 20–25 minutes until a toothpick comes out clean. Cool on wire rack.
Notes
For extra flavor, drizzle with glaze or sprinkle with coarse sugar before baking.
