- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay tortillas flat and spread Dijon mustard evenly; optionally add mayonnaise.
- Layer roast beef, cheese, and caramelized onions on each tortilla.
- Season lightly with black pepper.
- Roll tortillas tightly and slice into 2–3 inch pieces.
- Place roll ups cut-side down on baking sheet and brush with butter or olive oil.
- Bake 10–12 minutes until cheese melts and tortillas are lightly golden.
- Heat beef broth with Worcestershire sauce in a small saucepan for dipping au jus.
- Serve roll ups hot with dipping sauce, garnished with parsley if desired.
