Ingredients
  

Tortilla Roll Ups
  • 4 large flour tortillas
  • 8 oz thinly sliced roast beef
  • 4 oz Swiss or provolone cheese sliced
  • 1/4 cup caramelized onions optional
  • 2 tbsp Dijon mustard
  • 2 tbsp mayonnaise optional
  • 1/4 tsp black pepper
  • 1 tbsp butter or olive oil for baking
  • 1 cup beef broth for au jus
  • 1 tsp Worcestershire sauce

  • Parchment paper
  • Small saucepan
  • Mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay tortillas flat and spread Dijon mustard evenly; optionally add mayonnaise.
  3. Layer roast beef, cheese, and caramelized onions on each tortilla.
  4. Season lightly with black pepper.
  5. Roll tortillas tightly and slice into 2–3 inch pieces.
  6. Place roll ups cut-side down on baking sheet and brush with butter or olive oil.
  7. Bake 10–12 minutes until cheese melts and tortillas are lightly golden.
  8. Heat beef broth with Worcestershire sauce in a small saucepan for dipping au jus.
  9. Serve roll ups hot with dipping sauce, garnished with parsley if desired.

Notes

Can be made ahead and baked just before serving. Perfect for parties or casual entertaining.
