Ingredients
  

Salad Base
  • 4 cups shredded green cabbage
  • 1 cup cherry tomatoes halved
  • 1 cup canned corn drained
  • 1 cup black beans rinsed and drained
  • 0.5 small red onion thinly sliced
  • 0.5 cup shredded cheddar cheese optional
Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Topping
  • 1 cup Fritos corn chips lightly crushed
  • fresh cilantro chopped for garnish

Method
 

  1. Combine shredded cabbage, cherry tomatoes, corn, black beans, red onion, and cheddar cheese in a large mixing bowl.
  2. Whisk together olive oil, lime juice, honey, cumin, salt, and black pepper to make dressing.
  3. Pour dressing over salad and toss gently until evenly coated.
  4. Sprinkle lightly crushed Fritos over salad just before serving.
  5. Garnish with chopped cilantro and lime wedges if desired. Serve immediately.

Notes

Keep Fritos separate until serving to maintain crunch. Can add grilled protein for a main dish.
