Ingredients
  

Shrimp & Rice
  • 12 oz shrimp peeled and deveined
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zest and juice
  • 2 tbsp fresh parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Cook rice in chicken broth according to package instructions, then let sit covered for 5 minutes.
  2. Pat shrimp dry and season with salt, pepper, and red pepper flakes.
  3. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Cook shrimp 2–3 minutes per side until pink.
  4. Add remaining butter and minced garlic to skillet, sauté 1–2 minutes.
  5. Add lemon juice and zest, then return shrimp to skillet and toss in garlic butter sauce.
  6. Add cooked rice, gently mix, garnish with parsley, and serve immediately.

Notes

For more flavor, add a pinch of smoked paprika to the shrimp seasoning. Optional vegetables can be sautéed alongside shrimp.
