Ingredients
  

  • 1 cup neutral oil canola or peanut
  • 0.5 cup dried chili flakes Sichuan style preferred
  • 8 cloves garlic minced
  • 2 tbsp sesame seeds
  • 2 green onions chopped, optional
  • 1 tbsp soy sauce
  • 0.5 tsp salt
  • 0.5 tsp sugar optional

Equipment

  • Small saucepan
  • Heatproof bowl
  • Fine mesh strainer
  • Glass jar for storage

Method
 

  1. Combine chili flakes, sesame seeds, and salt in a heatproof bowl.
  2. In a saucepan, heat oil with minced garlic and green onions until garlic turns golden.
  3. Strain solids and pour hot oil over chili mixture. It should sizzle immediately.
  4. Stir in soy sauce and sugar, mixing well.
  5. Cool completely, then transfer to a jar. Store airtight for up to one month.

Notes

Use as topping for noodles, dumplings, or eggs. Adjust chili flakes for desired spice level. For crunch, keep the fried garlic bits in.
