Ingredients
  

  • 4 medium cucumbers thinly sliced
  • 2 cloves garlic minced
  • 2 tbsp fresh dill chopped
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or white wine vinegar
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Slice cucumbers into thin rounds.
  2. Whisk olive oil, vinegar, garlic, salt, and pepper in a bowl.
  3. Toss cucumbers with dressing until coated.
  4. Stir in dill, mix well.
  5. Chill at least 15 minutes before serving.

Notes

For extra crunch, chill cucumbers before slicing. Can be stored in the fridge for up to 24 hours.
