- Sprinkle gelatin over 1/2 cup cold water in a stand mixer bowl. Let bloom.
- In saucepan, combine sugar, corn syrup, salt, and remaining 1/2 cup water. Bring to boil, cook to 240°F.
- With mixer on low, pour hot syrup into gelatin. Beat on high 10–12 minutes until thick and fluffy. Add vanilla.
- Spread mixture into greased, powdered-sugar-dusted 9x13 dish. Rest 6 hours or overnight.
- Dust surface with powdered sugar, cut into squares or ghost shapes.
- Decorate marshmallows as Stay Puft or ghosts with food coloring and edible pens.
- Serve at Halloween parties, in cocoa, or as themed snacks.
Notes
Decorate creatively to resemble Stay Puft Marshmallow Man or spooky ghosts. Store in airtight container for up to a week.
