Ingredients
  

Base Marshmallows
  • 3 envelopes unflavored gelatin about 21g total
  • 1 cup cold water divided
  • 1.5 cups granulated sugar
  • 1 cup light corn syrup
  • 0.25 tsp salt
  • 1 tbsp vanilla extract
  • powdered sugar for dusting
Decoration
  • food coloring blue and red for sailor hat details
  • melted chocolate or edible markers for faces

  • Stand mixer
  • Candy thermometer
  • Saucepan
  • 9x13-inch baking dish
  • Spatula
  • Cookie cutters

Method
 

  1. Sprinkle gelatin over 1/2 cup cold water in a stand mixer bowl. Let bloom.
  2. In saucepan, combine sugar, corn syrup, salt, and remaining 1/2 cup water. Bring to boil, cook to 240°F.
  3. With mixer on low, pour hot syrup into gelatin. Beat on high 10–12 minutes until thick and fluffy. Add vanilla.
  4. Spread mixture into greased, powdered-sugar-dusted 9x13 dish. Rest 6 hours or overnight.
  5. Dust surface with powdered sugar, cut into squares or ghost shapes.
  6. Decorate marshmallows as Stay Puft or ghosts with food coloring and edible pens.
  7. Serve at Halloween parties, in cocoa, or as themed snacks.

Notes

Decorate creatively to resemble Stay Puft Marshmallow Man or spooky ghosts. Store in airtight container for up to a week.
