Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.33 cup molasses
  • 1 egg large
  • 0.5 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. Cream butter and brown sugar until light and fluffy. Beat in molasses and egg.
  4. Gradually mix dry ingredients into wet until soft dough forms.
  5. Chill dough for 1 hour if desired.
  6. Form 1-inch balls and roll in powdered sugar.
  7. Place on baking sheets 2 inches apart and bake 10–12 minutes.
  8. Cool 5 minutes on sheets, then transfer to wire racks.

Notes

Chilling dough helps prevent spreading and enhances flavor.
