Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp cloves
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 egg large
  • 0.25 cup molasses
  • 1 tsp vanilla extract

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking soda, salt, ginger, cinnamon, and cloves in a bowl.
  3. Cream butter and brown sugar until light and fluffy. Add egg, molasses, and vanilla.
  4. Mix dry ingredients into wet ingredients until dough forms.
  5. Roll dough into balls, coat in granulated sugar then powdered sugar.
  6. Bake for 10–12 minutes until cracked and set.

Notes

Do not overbake for best soft texture.
