Ingredients
  

Pie Batter
  • 2 cups ricotta cheese full-fat
  • 3 eggs large
  • 0.75 cup honey
  • 0.5 cup all-purpose flour
  • 0.25 cup olive oil
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 0.25 tsp salt
  • 2 tbsp sesame seeds for topping

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Mix ricotta and honey until smooth.
  3. Add eggs one at a time, mixing well.
  4. Stir in olive oil, vanilla, lemon zest, and salt.
  5. Fold in flour until just combined.
  6. Pour batter into pan and smooth top.
  7. Sprinkle sesame seeds evenly over batter.
  8. Bake 40–45 minutes until golden and set.
  9. Cool completely before slicing and serving with honey drizzle.

Notes

Best served at room temperature with extra honey.
