Ingredients
  

Chicken & Vegetables
  • 4 chicken thighs or breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 zucchini sliced
  • 1 red onion sliced
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
Topping
  • 0.5 cup feta cheese crumbled
  • 10 kalamata olives pitted and halved
  • 1 tbsp fresh parsley chopped

Equipment

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
  2. Rub chicken with olive oil, salt, pepper, oregano, and thyme.
  3. Spread bell peppers, zucchini, onion, and garlic evenly in casserole dish, drizzle with olive oil.
  4. Place seasoned chicken on top of vegetables.
  5. Bake 35–40 minutes until chicken reaches 165°F and vegetables are tender.
  6. Sprinkle feta and olives evenly, bake 5 more minutes.
  7. Garnish with parsley and serve warm.

Notes

Optional: add cherry tomatoes or eggplant for extra flavor. Assemble in advance and refrigerate until baking.
