Method
- Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
- Rub chicken with olive oil, salt, pepper, oregano, and thyme.
- Spread bell peppers, zucchini, onion, and garlic evenly in casserole dish, drizzle with olive oil.
- Place seasoned chicken on top of vegetables.
- Bake 35–40 minutes until chicken reaches 165°F and vegetables are tender.
- Sprinkle feta and olives evenly, bake 5 more minutes.
- Garnish with parsley and serve warm.
Notes
Optional: add cherry tomatoes or eggplant for extra flavor. Assemble in advance and refrigerate until baking.
