Ingredients
  

For the Marinade
  • 0.25 cup olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • salt and pepper to taste
For the Skewers
  • 12 large shrimp peeled and deveined
  • 12 sea scallops cleaned
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 zucchini sliced into ½-inch rounds
  • lemon wedges for garnish
  • fresh parsley or cilantro for garnish

Method
 

  1. Whisk together marinade ingredients in a bowl.
  2. Toss shrimp and scallops in the marinade; let rest 15–20 minutes.
  3. Thread seafood and vegetables onto skewers alternately.
  4. Grill skewers on medium-high heat 2–3 minutes per side until seafood is cooked and vegetables are tender.
  5. Serve skewers on a platter, garnished with lemon wedges and fresh herbs.

Notes

Pre-soak wooden skewers to prevent burning. Mix veggies for colorful presentation. Serve immediately for best taste.
